Dairy Free Carrot bread

Grandma’s Carrot Bread (slightly changed to become dairy free)

½ cup oil
1 cup sugar
2 eggs beaten
1 cup shredded carrot
1 ½ cups sifted all-purpose flour
1 tsp. soda
1 tsp. baking powder
¼ tsp. salt
1 tsp. ground cinnamon
1 cup applesauce
¼ cup rice milk

Mix the sugar and oil. Add the beaten eggs. Stir in shredded carrot. Sift flour baking powder, soda cinnamon and salt. Add small amounts to sugar mixture alternately with wet ingredients. Bake in well greased loaf pan for 55 minutes in 350 F (180 c) oven
