Chocolate Crinkle Cookies

Chocolate Crinkle Cookies
Those cookies are really soft and fudgy. Although the dough needs time to chill, these little beauties are well worth the wait!

1/4 cup canola oil
3/4 cup granulated sugar
2 Tbsp brown sugar, firmly packed
1/2 cup unsweetened applesauce
1/4 tsp instant coffee granules
1/2 cup cocoa powder, sifted
1 tsp vanilla extract
1 1/4 cup all-purpose flour
1 tsp baking powder
1/8 tsp salt
1/2 cup icing sugar

In the bowl of a mixer, combine oil, sugar, applesauce, coffee granules, cocoa powder and vanilla extract until well combined. In a separate medium bowl combine flour, baking powder and salt. Add the dry ingredients to the wet and mix until combined. Place dough in the freezer for one hour.

Preheat oven to 350 degrees and line baking sheet with parchment paper. Using a small cookie scooper, drop 1 inch balls of dough in icing sugar and roll until completely covered with sugar. Place on baking sheet and bake for 10 minutes or until cookies are just set. Do not overbake. Cool completely on cookie sheets.

Tip: These would make an extra special treat for Valentine's Day if rolled in red sanding sugar. You could also use silver sanding sugar for a wedding anniversary. The possibilities are endless.

Cook Time: 10 minutes
Yeld: 3 dozen
Ove 350 F

Stuffed Peppers Bosnian Styles

1 LB TURKEY, GROUND

½ CUP UNCOOKED WHITE RICE, OR PARTIALLY COOKED BROWN RICE

1 LARGE ONION, FINELY CHOPPED

2 CLOVES GARLIC, MINCED

1 SMALL CARROT, GRATED

1 ½ TEASPOONS VEGETABLE SOUP BASE POWDER

1 TEASPOON FRESH DILL WEED, CHOPPED

4 TABLESPOONS FRESH PARSLEY, CHOPPED

8 MEDIUM HUNGARIAN/GYPSY PEPPERS

1 MEDIUM TOMATO

SALT AND PEPPER TO TASTE



1. Preheat oven to 425ºF.

2. In a food processor combine the onion and garlic and pulse until chopped to your liking. Fry in a pan until onions become translucent. Add ground turkey and fry until completely brown. Remove from the stove and add chopped carrot, rice, vegetable soup powder, dill weed, parsley, salt and pepper.

3. Wash and core the peppers. Using a fork, pierce each pepper a couple of times to let the steam escape during baking.

4. Slice the tomato into eight disks. Stuff each pepper with the filling then use a tomato slice to close the opening to the pepper. Use remaining tomato slices for garnish and for covering the bottom of the baking pan.

5. Sprinkle peppers with a little oil and place in the oven. Bake for 40 minutes, until skin is blackened.

Serves 8

Note: For a more rustic feel, take 3 medium tomatoes, slice into wedges, and spread on the bottom of the baking pan.

Jude The Dude


Bridget Batson has a new book out Jude The Dude The Peanut Allergy Kid


The first thing that grabbed me was the quirky pictures in this book. They are part carton, part photograph. Jude learns he has a peanut allergy, he over comes his fear of his epi-pen shot, and practices with his trainer.

He does what most allergic kids do, he brings his peanut free cupcakes to places, takes his medication everywhere. Jude also sits at peanut free table at school and learns other ways to live safely.

One thing Jade does (that few allergy kid book characters do) he grows up to be a successful man with kids of his own.

Food Allergies and Me


I had the chance to review the food allergy children's book Food Allergies and Me by Juniper Skinner

This story is about Jack who is allergic to peanuts, eggs and milk. The story takes the reader through the basics of food allergy safety at school, playground, and birthday parties, from the view point of Jack. An allergic child might enjoy seeing a book character bring their own "safe cupcake" to a birthday party, as it is familiar to so many allergic families, and a part of Jack's life as well.

The reader also follows Jack as he goes to the allergist and other allergy basics in the language of a young child.

Jack shares more about himself than his food allergy, such as his love of dinosaurs and soccer.

Like most children's food allergy books, the book is meant to initiating allergy awareness not provide medical information.

I Can't Eat Your Treats


Don't Feed Me, LLC is proud to announce their new children's book "I Can't Eat Your Treats - a kid's guide to gluten-free, casein-free eating". Morgan Paulsen, 12-year old resident of Arlington, MN, wrote the book to help her sister Aivah, and other children who follow a gluten-free, casein-free diet, explain to others why they need to eat "special" foods. The 54-page, full-color book tells the story of Morgan's 3-year old sister Aivah, who has Celiac disease and a casein allergy. Morgan combined photos and a story that children can understand to explain why children who follow a gluten-free, casein-free diet can't eat foods that contain gluten or casein and what happens if they do. The photographer, 16-year old Emma Paulsen, is Aivah's oldest sister.

Morgan's book includes a section for parents that explains Celiac disease, gluten, casein and cross-contamination. Also included are twelve of Aivah's favorite gluten-free, casein-free kid-friendly recipes for foods such as Green Eggs & Ham, GFCF Macaroni & Cheese and Homemade Marshmallows.

Reactions to food allergies can range from hives and diarrhea to anaphylactic shock and death. 1 in 130 people have Celiac disease, which is the body's inability to digest gluten, a protein found in grains such as wheat, barley and rye. 75% of the world's population cannot eat dairy because they are either lactose intolerant or have a casein allergy. Casein is a protein found in dairy products. Autism affects 1 in 1000 people and many have seen a drastic improvement by following a strict gluten-free, casein-free diet.
